In 1970, Maurice Rouas, best known for his front-of-the-house presence, opened Fleur de Lys. In 1986, Rouas welcomed a young French chef Hubert Keller as executive chef and partner.

Fleur de Lys, the Westside mansion that recently sold for a Southern California record-breaking price of $102 million, is now available for lease for $400,000 a month to long-term tenants.
