Quinoa Patties - MSNDirections . In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Remove from heat; fluff with a fork.
Quinoa Patties. 1 cup water. 1/2 cup quinoa, rinsed. 1 medium carrot, cut into 1-inch pieces. 1 cup canned cannellini beans, rinsed and drained. 1/4 cup panko bread crumbs. 3 green onions, chopped.
Transfer the quinoa to a large bowl and let it cool for at least 15 minutes. Meanwhile, tear the bread into large pieces. Pulse them in a food processor about 10 times, or until coarsely ground.
To the panko-egg mixture, add the quinoa, scallions, tarragon, cheese, 1 teaspoon salt and ½ teaspoon pepper. Mix by hand, then form into four 3-inch patties, pressing firmly so they hold together.
