2. Wash and bake sweet potatoes until tender (see note). Peel potatoes and place pulp into large mixing bowl. Add butter, brown sugar, salt and pepper and eggs.

Spoon the mixture into a casserole dish and bake in a 350F oven, uncovered until tender. About 45-60 minutes. In the meantime, mix the breadcrumbs with the melted butter.
