If you prefer to sign out of specific accounts, go into Manage accounts on this device. Select the account you want to remove, and hit Remove account on Android, or Remove from this device on iOS.

Make sure Apple knows who you trust. By setting up a legacy contact, you'll be covered if something happens to you.
