MAYONNAISE: Blend the egg yolk with the mustard, salt and pepper and ½ lemon juice and slowly drizzle in the oil. COCKTAIL SAUCE: Once the mayonnaise is ready add all the other ingredients and mix.
Finish with a drizzle of honey, then remove from the heat. Cool. Add the king prawns to the platter and sprinkle with watercress and extra paprika and serve with slices of lime.
