Method Preheat the oven to 170 degrees celsius. Line two large flat baking trays with baking paper. Sift the flour, ginger and salt into a bowl and add the oats, coconut and sugar.
Take the tray out of the fridge and generously sprinkle each biscuit with sugar. Bake for 10–12 minutes, until lightly golden. Take out and leave to cool completely on the tray.
Place the biscuits onto lined baking trays with a few centimetres between each one. Bake for 15-20 minutes (depending on the size you cut the dough) until they are turning golden. Cool on a wire rack.
