The SOMERSET CIDER VINEGAR COMPANY makes traditional cider vinegar (also called Apple Cider Vinegar or ACV) from 100% Somerset cider apple juice. Unlike supermarket apple cider vinegars, our vinegar is TRADITIONALY FERMENTED for THREE YEARS. Most supermarket apple cider vinegars are made industrially in a single day using discarded dessert fruit and imported concentrate. They are fermented by feeding compressed air and nutrients to acetic acid bacteria. This process does not allow for the creation of the vinegar 'mother' that is so important for health treatments.
